An exceptionally well made red from independent vigneron Joseph Paillé operating in the Côtes du Roussillon imported by St. John’s co-founder Trevor Gulliver. Totally organic and biodynamic, with minimal intervention, this is a wonderful expression of a quality southern French red, with classic notes of blackberries, supple tannins, oozing balance, richness, and a graphite palate. This is the big red that really will get pulled out once the Christmas meat hits the table, however will also stand up perfectly well with a cheese board.
